Chicken and Dumplings

Whenever the weather starts to turn cold I am always on the search for warm and filling foods to get me through the winter months. No matter what I stumble upon though I always have a soft spot for my mother's chicken and dumplings. I thought I'd share the recipe today with you. It's really easy to make and is oh so tasty. Plus if you make a big pot you can usually get a couple days out of it which is always nice. Let me know what you think about chicken and dumplings or this recipe in the comments below.

Ingredients:

  • 1 can cream of chicken soup

  • 1 can cream of mushroom soup

  • milk (use one empty soup can to measure)

  • chicken breast

  • chicken broth

  • spring onions

  • carrots

  • celery

  • short crust pastry for dumplings

  • pepper and salt to taste

Cook breast first in some chicken broth to keep nice and juicy. Make sure chicken is completely cooked. In another pot mix the two soups and milk together and simmer over low heat. Stir occasionally. Add your chopped vegetables. I didn't add weights or anything cause really it's up to you. If you want to add more vegetables or different vegetables then do. This is just the way my mom makes it. Add chicken and broth to mix and continue to simmer until warm all the way through. Tear pieces of pastry and roll into small balls and drop into the soup mixture. Cook for 10 to 15 mins. Add salt and pepper to taste. Serve in large bowls with fresh bread and you have a lovely winter comfort meal.
